Valentine’s Day calls for indulgence—but at Dr. Konstantin Frank Winery, indulgence comes with intention. An Unexpected Approach to Chocolate Pairing

For this limited-time experience, four Dr. Frank wines are paired with four specialty chocolates from Laughing Gull Chocolatiers of Rochester, NY—a woman-owned, small-batch chocolate maker known for pushing flavor boundaries.

Laughing Gull’s chocolates are culinary creations, not confections. Each bite incorporates sweet, savory, spice, and herbaceous elements, creating layers of flavor that evolve alongside the wine. The result is a thoughtful, nuanced tasting experience—often unlike any chocolate guests have tried before.

Every piece is crafted with care and creativity, emphasizing quality, balance, and a sense of discovery.

Featured Chocolate & Wine Pairings

Each pairing is designed to highlight contrast, complement structure, and elevate both the wine and the chocolate:

  • 2020 Blanc de Noirs paired with a Chocolate Mole Bite
Deep, savory notes and subtle spice echo the wine’s richness and complexity.

  • 2024 Dry Riesling paired with a Spiced Honey Bite
Bright acidity meets warming spice and floral sweetness for a beautifully balanced pairing.

  • 2022 Lena paired with a Blackberry Ginger Balsamic Bite
Dark fruit, gentle tannin, and vibrant acidity intertwine with sweet-savory depth.

  • 2023 Merlot paired with a Salted Caramel Bite
Plush texture and ripe fruit meet silky caramel and a touch of sea salt for a classic-meets-modern finish.

How to Experience the Pairing

Guests may select this Chocolate & Wine Pairing in place of our Signature Seated Tasting, at the same value of $18 per person, once seated in the tasting room.

Whether you’re celebrating romance, friendship, or simply a love of wine and flavor exploration, this experience offers a memorable and delicious way to spend Valentine’s weekend in the Finger Lakes.

Reservations are recommended, as this pairing is available for Valentine’s Day Weekend only.

Underappreciated By Many Wine Lovers, These Excellent Rieslings Will Change Minds

For a grape that is planted in so many countries worldwide, few wine lovers rank Riesling as among their favorite varietals, instead naming whites like Chardonnay, even Pinot Grigio and Sauvignon Blanc ahead of it. Once appreciated for the very qualities that distinguished Riesling—its sweetness, richness and acid—today the sale of sweet wines (usually for dessert), even French Sauternes, has decreased in favor of what many perceive as more sophisticated dry varietals.

Is Black Wine the New Orange?

The preferred grape for amateur vintners was one that wasn’t particularly popular with the professionals: alicante bouschet, described in one 1883 wine guide as lacking “elegance, force and delicacy.” It’s what’s known as a teinturier variety, meaning that, unlike most red grapes, its pulp as well as its skin are deeply colored, resulting in wines so dark that they’re almost black.
