
COMPOSITION:
90% Chardonnay
10% Pinot Blanc
VINIFICATION:
All grapes originate from Chateau Frank’s vineyards and are pressed whole cluster in membrane press while making a severe selection of the press fraction in the traditional Champagne style. The base wines were fermented cold at 16 C/61 F to preserve fruity aromas and freshness. After estate tirage the bottles were aged “sur lies” in underground cellar for more than three years before being riddled by hand or gyropalette.
DESCRIPTION:
Presenting typical complexity and delicate flavors, this wine exemplifies the traditional Blanc de Blancs style. A crisp acidity accompanied by rich pear and honeysuckle with citrus, lemon, and ginger makes this Sparkling Wine vibrantly pleasant. Extended lees aging (tirage) gives earthy and toasty notes with a soft vanilla finish. Serve with rich foods such as caviar or salmon.
